Chosen, Not Just Collected
Every pod is checked by hand for colour, weight and feel before it's opened. Only the finest make the cut, because each one holds the promise of something special.
Separating the Best From the Rest
Inside each pod are 30 to 40 beans wrapped in sweet white pulp. We sort them by hand once more, so only the very best beans carry on.
Where the Flavour Wakes Up
Gentle heat slowly coaxes out the rich aroma hidden inside each bean. We roast in small batches and never rush, because this is where the flavour truly wakes up.
Shell Off, Flavour On
A gentle crack loosens the hard shell, and a rush of air carries it away. What's left is the nib, the only part we need to make chocolate.
Turning Nibs Into Liquid Gold
The cocoa nibs are slowly ground into a rich, velvety cocoa liquor. It's the first transformation where cocoa begins to resemble the chocolate we know and love.
Patience, Poured In
Over several days, the chocolate is mixed and refined until every trace of grit disappears. It's this slow, patient step that gives it a smooth texture and rich flavour.
Precision Over Everything
The chocolate is carefully heated and cooled until it sets just right. This is what gives it that glossy shine and the satisfying snap you hear in every piece.
Taking Shape
The smooth chocolate is poured into moulds and left to set into a bar. At last, it takes the shape you know, with every square in its place.
Wrapped With Care
Each bar is wrapped and sealed with the same care that shaped it. Now it's ready to travel, ready to be opened, and ready to enjoy.
